Title: Ice Cream Preserves

Yield: 1 Batch

2cGround green tomatoes
  (measured after grinding)
2cSugar or 1 c. honey
1 3-ox. box berry flavor jello

Bring tomatoes and sugar to boil. When in full rolling boil, boil 2 minutes. Take off stove. Then add one box jello, stir well. Put in hot sterile jars, seal. SOURCE: Sandy Tubbs Note: I used to make this myself when my kids were young. It's an easy, inexpensive alternative to store-bought preserves, and a good use of all those green tomatoes left just before the first freeze of winter. Raspberry or blackberry jello work great. Good for ice cream topping, or jelly breads.
